New Candy making Recipes

Coconut clusters

¼ cup of coconut
¼ cup of chocolate, melted

Combine both ingredients. Divide into 4- 6 clusters on wax paper.

Marshmallow Cherry clusters

1/3 c mini marshmallows
4 cherries, chopped.
¼ cup chocolate melted

Chop cherries. Combine with marshmallows and chocolate. Make four clusters


Chocolate covered marshmallows


6 lg marshmallows
¼ c melted chocolate
6 cups

Fill the bottom of cups with chocolate. Place 1 Marshmallow in the center of each cup. Pour chocolate over the Marshmallow to cover.


Chocolate covered cherries

6 cherries
¼ c. powdered sugar
1/3 c melted chocolate
6 cups

Take a small amount of chocolate and place in the bottom of each cup. Take cherries and roll in the powdered sugar. Place one cherry on top of the chocolate in each cup. Cover with the rest of the chocolate. Set aside to cool.

Candy making

Truffles

2 tsp. melted chocolate
1 oz cream cheese
¾ c powder sugar
6 mini chocolate holders

Mix the first three ingredients together. Divide into the six cups. Sprinkle with cocoa, cinnamon or coconut. Set aside to cool.

Almond Clusters

¼ c shocolate, melted
¼ c powder sugar
½ c of whole almonds

Combine all the ingredients and drop onto wax paper in tablespoon size clusters.

Almond Turtles

16 whole almonds
2 caramels, cut in half through the narrow side
¼ c of chocolate, melted

Group the almonds in four clusters of four. Place on piece of caramel on each set of almonds. Divide the chocolate, pouring it over the four clusters.

Christmas Hay stacks

¼ c white chocolate
¼ c of almonds
6 red cherries
2 tablespoons of coconut

Chop up the cherries. In a bowl, combine cherries chocolate and almonds. Make six haystacks on wax paper. Sprinkle with coconut.

Chocolate Dipping Station

Melted chocolate
Pretzels: dip one end of the pretzel in the shocolate and let it cool.
Marshmallows, jimmies and straws
Insert straw into the Marshmallow. Dip half of the Marshmallow into the chocolate. While still hot, dip the chocolate end of the marshmallow into the jimmies. Let cool.
Potato Chips: dip one end of the chip in the chocolate and let cool.

Crush the candy cane. Divide the dandy cane crumbs between six cups. Pour melted chocolate over until covered. Let cool.

Chocolate covered marshmallows


6 lg marshmallows
¼ c melted chocolate
6 cups

Fill the bottom of cups with chocolate. Place 1 Marshmallow in the center of each cup. Pour chocolate over the Marshmallow to cover.


Chocolate covered cherries

6 cherries
¼ c. powdered sugar
1/3 c melted chocolate
6 cups

Take a small amount of chocolate and place in the bottom of each cup. Take cherries and roll in the powdered sugar. Place one cherry on top of the chocolate in each cup. Cover with the rest of the chocolate. Set aside to cool.

Potato Latkes

1/2 c frozen hash browns
2 tsp. of chopped onions
2 Tablespoons Flour
1 tsp. of egg or egg beaters

Combine all ingredients. Place on hot griddle and flatten until 1/4" to 1/2" tall. Fry until golden brown. Flip once. Serve with applesauce and sourcream.

Fresh Cranberry salad

2 tbls. Fresh cranberries, chopped
¼ c crushed pineapple with juice
¼ c mini-marshmallows
2 Tbls. Of sugar
¼ banana chopped
1 heaping tablespoon of whipped cream

Combine first four ingredients. Stir until sugar is dissolved. Add banana and whipped cream. Stir to combine.

Pumpkin Pie Spread

1 oz of cream cheese
2 Tablespoons of canned pumpkin (not pumpkin pie mix.)
1/8 teaspoon of cinnamon
dash of nutmeg
dash of salt
1/8 tsp. sugar
Crackers

Combine all of the ingredients. Eat with Crackers.

Banana Pudding Pie

1 graham cracker
1/2 of a banana
3 Tablespoons of applesauce
1 tsp of yogurt or cream cheese

Crush graham cracker in a plastic bag. Pour into a cup. Set aside.

Mash the banana in a bowl. Add the applesauce and yogurt/cream cheese. Stir together. Pour over graham cracker.

No Bake Cinnamon Nutmeg Cookies

20 pretzel sticks
¼ tsp. Of soft butter
1 teaspoon of vanilla or apple yogurt,
4 tsp. Of powdered sugar
cinnamon
nutmeg

Crush pretzels in a plastic bag until fine. Set aside.

Combine butter, yogurt, and the powdered sugar.

Add pretzels.

Sprinkle cinnamon and nutmeg over everything. Stir together.

When everything is mixed, divide dough into to two parts. Roll each part into a ball. Flatten the balls. Enjoy.

Fried Pictures

2 ½ tablespoon flour
Dash of salt
1 ½ teaspoon of oil
1 teaspoon of water/milk
½ teaspoon of sugar
Dash of cinnamon
Food coloring
Small amount of water
Paint brushes

Combine flour with salt. Combine oil and water/milk. Add flour mixture to oil mixture and stir.

Lightly flour rolling surface. Put dough in center. Roll out.

Add a drop of food color to a tablespoon of water. Paint picture on the dough.

Combine sugar and cinnamon. Sprinkle over picture.

Fry on a 350 degree skillet until lightly browned.

Freshly Turned Graveyard with worms

2 oreo cookies
1 milano cookie
1 single serving chocolate pudding
2 1/2 - 3 tablespoon of milk or water
1 heaping tablespoon of whipped topping
3 sweet and sour gummy worms

Crush one oreo in a plastic bag. Dump into a cup. set aside.

Pour pudding into another cup. add milk or water a little at a time until the pudding is creamy. Fold in the whipped cream. Pour over the cookies in the first cup.

Take second oreo and crush it in the plastic bag. Pour over pudding mix. stick the worms in coming up out of the ground. Put the Milano cookie in like a headstone.

Mexican appitizer rolls with salsa

1 burrito size flour tortilla
1 oz cream cheese
1 scallion onion

Spread cream cheese over the tortilla. Set aside. Chop up the scallion and sprinkle over the top of the tortilla. Roll up the tortilla and slice into 1/2 inch rolls. Set aside.

Salsa

2 oz diced tomatoes
1/2 of a jalapino
1 tsp. diced onion
4-5 leaves of cilantro

Combine all the ingredients together. Serve with the tortilla roll ups.

Apple Shells

2 cresent roll rolls

1/2 tsp. cream cheese
1/4 tsp. sugar
1/4 apple, peeled, cored and cut into two peices
dash of cinnamon

Take each roll and place it on a cooking sheet.

Spread Cream cheese over half of each roll. Sprinkle sugar over cream cheese. Place one section of apple on top of the cream cheese.

Fold the roll half way over the apple and press together the corners where the folds are to create a shell shape. (Think Macaroni shells).

Bake in a 375 degree oven for 10 to 11 minutes.

Jazz Cake for one

1 sponge cake or slice of angel food cake, chopped
1/2 of an orange
2 TBl. of pinapple
2 tbl. of coconut
1/4 c. of sour cream
1/4 t. of brown sugar
4 or 5 marciano cherries

Chop up cake. Put in a bowl and set aside.

Chop up the fruit. Pour into a bowl. Stir in coconut, sour cream and brown sugar. Pour over cake and eat.

Lumpia

2 Tbl of Hamburger
½ sm potato
¼ sm onion
¼ cup of carrots, shredded
¼ cup of bean sprouts
½ tsp. Soy sauce
Egg roll wrappers

Chop up the ingredients until fine except wrappers.

Divide into three portions.

Place one potion on a wrapper. Wrap sealing ends with water.
Fry until golden brown

Mock Apple Caramel pie

½ of a cinnamon graham cracker
1 Oz of cream cheese
2 Tablespoons of Applesauce
2 teaspoon of Marzetti’s dipping caramel

Place graham cracker in a plastic bag and crush. Pour into serving cup. Set aside.

In a bowl, combine cream cheese and applesauce until well blended. Pour over graham crackers.

Cover with the caramel and eat.

Picnic Recipes

Carrot – Apple Salad

2 carrot, shredded
1 unpeeled, cored apple, chopped
1 teaspoon of lemon juice
2 Tablespoon of raisins
2 Tablespoon of Mayonnaise

Shred the carrot. Take shredded carrots and put them in the bowl.
Take the apple and chop into small pieces. Add the apple to the bowl.
Pour pour lemon juice on top. Stir to coat the carrot and the apples.
Add the raisins and the Mayonnaise. Stir. Divide onto two plates.

Cucumber Sandwich

¼ of a cucumber, seeded and diced
1 tsp. Cream cheese
4 tsp. Mayonnaise
1 tsp. Onion.
Dash of salt to taste.
Two slices of wheat bread

Combine ingredients and spread over a slice of bread. Place second slice of bread on top. Cut into four pieces. Place two in each plate.

Egg Salad


1 hardboiled egg, chopped
½ tsp. Of relish
1 Tablespoon of Mayo
½ teaspoon of Mustard

Combine ingredients and spread over one slice of bread. Cover with second slice. Cut into four pieces. Place two in each plate.

Lemonade

1 Lemon, squeezed
2 teaspoon of sugar
Water
Ice.

Put a teaspoon of sugar in each glass. Squeeze the lemon juice and divide between the two glasses. Add Ice and water. Stir. Add more sugar if needed.
Potato Salad

2 small potato, chopped
1/2 hardboiled egg, chopped
1 tsp. Of relish
2 Tablespoon of Mayo
½ teaspoon of Mustard

Combine all ingredients. Divide between two plates.

Mini-Pizza Poppers

1 refrigerator pie crust
3 tablespoons of pizza sauce (see below)
1/3 C shredded mozzarella cheese

Recipe: Heat oven to 400 degrees.
Lay out pie dough to warm up and set aside
Make pizza sauce by combining 3 tablespoons of tomato sauce, a dash of Basil, Oregano, and Pepper. Stir in cheese.

Cut pie dough into 7 - 3½” circles. Spread 1 teaspoon of sauce and cheese mixture on ½ of the circle. Brush water around edge of pie crust. Fold over pie crust and seal with fork.

Place on Cookie sheet and bake for 12 to 15 minutes. Serve warm.

Chocolate ramen cakes

You will need: -
1/3 package of ramen noodles (crushed)-
1 small dessert cupcake-
1/3 cup of cherries-
1/3 cup of chocolate dessert fondue-
1/3 cup of vegetable oil (cooking)

How to cook the noodles:
1. divide the noodles into thirds and place sections in ziplock bags.
2. break the ramen into small pieces.
3. Heat the vegetable oil in the cooking pan.
4. When the oil is hot, Put your noodles in. Stir constantly. (Since ramen are dehydrated, you have to be careful not to burn them. )Your noodles are ready once they have a nice brownish color.
5. Take ramen off of the heat and set aside.


The recipe:
1. Put the 1 cakes in a plate.
2. Add the cherries and the fried ramen on top of the cakes.
3. Pour the chocolate fondue on top of everything.

Mexican Food 2

Recipes

Stacked enchiladas (Enciladas De Queso)

5 corn tortillas
1 c cheddar cheese
1 onion, chopped
Enchilada sauce
Oil for frying.

Lightly fry the corn tortillas in oil. Place in an ungreased pan. Cover with enchilada sauce. Next layer cheese and then sprinkle with onions. Repeat 4 more times.

Bake at 350 degrees for 15 minutes. Cut into wedges and serve.

Jicama Appetizer (Jicama Fresca)

1 Tablespoon salt
¼ teaspoon chile powder
1 to 2 lbs. Jicama, Peeled
1 lime, cut in wedges

Blend salt with chile powder and put into a small bowl.

Slice Jicama in ¼ to ½” thick slices and arrange on a tray with seasoned salt and lime wedges. To eat, rub lime over Jicama and dip into the salt.

Puffy Fried Bread
(Sopaipillas)

1 c flour
1/3 teaspoon of salt
¾ teaspoon of baking powder
¾ teaspoon of sugar
½ tablespoon of butter
1/3 cup of milk
Oil for frying

Mix together the dry ingredients. Cut in the butter. Add enough milk to make a soft dough. Let stand for 30 to 60 minutes. Then roll to ¼ inch thick and then cut into diamonds. Fry in hot oil, flipping to puff both sides and then fry until lightly brown. Drain on paper towels.


Chili Rellano casseroles

1 teaspoon of green chilis in the bottom of a greased cupcake. Add a layer of cheese, either cheddar, Monterey Jack or both. Repeat 2 more times. Set Aside. Repeat process in a second cupcake holder.

Combine 1 egg, 1/3 cup of milk and 1 tablespoon of flour. Divide mixture between the two cupcake holders.

Bake at 350 degrees for 20 to 25 minutes. Let stand before serving.

I Love You Banquet

Enchilada sauce (Salsa de Chile Rojo)

1 medium onion, minced
2 tbls. Oil
3 ½ cups tomato puree
2 cloves garlic, minced or mashed
4 tbls.chili powder
½ teaspoon cumin
¼ teaspoon oregano
1 teaspoon salt

Sauté onion in oil until limp. Add tomato puree and garlic gradually stir in chili power. Add cumin, oregano and salt. Cover and simmer for at least 30 minutes, stirring often. Make 3 cups.

Refried Beans (Frijoles Refritos)

1 lb. Of beans
5 cups of water
1 or 2 onions, diced
½ to 1 cup of bacon drippings, butter, or lard
Salt to taste

Clean beans. Cover with twice as much water and soak overnight. Place beans in pan with water just covering the beans. Add onions, fat and salt. Cook until beans are tender and mash. Continue cooking until the beans are thick. Serve or reheat.

Jicama appetizer (Jicama Fresca)

1 tablespoon salt
¼ teaspoon chile powder
1 to 2 pounds jicama, peeled and sliced
1 lime, cut in wedges.

Combine salt with chili powder. Prepare Jicama. Serve with lime slices and salt mixture. Rub lime over Jicama slice and dip in salt mixture.

Corn Tortillas

1 cup Masa Harina

½ cup – 1 ½ tbls. Of water

Mix masa flour with warm water until dough holds together well. Using your hands, shape dough into a smooth ball. Divide dough into 6 equal-sized pieces, then roll each into a ball.

Flatten ball into a pancake shape with hands and place between two sheet of wax paper. Continue flattening until approximately 1/8” thin.

Peel off top layer of wax paper and place tortilla on a med-hot griddle. Remove second sheet of wax paper when the tortilla becomes warm. Bake 1 ½ to 2 minutes until the tortilla looks dry and is lightly flecked with brown specks, turning often.

Waffles

Waffles

¾ C. flour + 1 Tablespoon
1 TBl. Sugar
½ Tbls. Baking powder
1 egg
¾ c. water
¼ c. oil
½ tsp. Of vanilla.

Combine dry ingredients. Set aside.

Beat eggs in a separate bowl. Add water, oil and vanilla. Combine with dry ingredients.

Pour approximately 1 cup into the hot waffle iron. The waffle is done when it stops steaming.

Substitution Hints for creating your own recipes

  1. In a vanilla pudding recipe, you can substitute water for milk in Jell-o brand puddings and still keep the rich yellow coloring.
  2. Marzetti's Dipping Caramel in the produce section can often be used in place of peanut butter in no-cook recipes.

Single Serving Banana Pie

Crush 6 vanilla wafers in a plastic bag. Pour into cup. Mash ½ of a small banana in a bowl. Add 3 Tablespoons of plain applesauce. Stir in 1 t. of plain yogurt and enjoy.

Carrot-Apple salad

1 carrot, shredded
½ of an unpeeled, cored apple, chopped
½ teaspoon of lemon juice
1 Tablespoon of raisins
1 Tablespoon of Mayonnaise


Shred the carrot. Take shredded carrots and put them in the bowl.

Take the apple and chop into small pieces. Add the apple to the bowl.

Pour pour lemon juice on top. Stir to coat the carrot and the apples.

Add the raisins and the Mayonnaise.

Stir and Enjoy.

MOTHER’S DAY SWEET TREAT

½ Cup Of Flour
½ Teaspoon Plus 1/8 Teaspoon Baking Powder
1/8 Teaspoon Baking Soda
1/8 Teaspoon Of Salt
1/8 Teaspoon Of Sugar
1 ½ Tablespoon Of Butter Cut Into 12 Pieces
3 To 3 1/2 Tablespoons Of Buttermilk
1 Teaspoon of Jam
1 Teaspoon of Sugar
1 Tablespoon of Cream Cheese

Combine first five ingredients. Cut in the butter. Add buttermilk and fluff.
Roll out until dough is ¼” thick. Cut in half.
Place next 3 ingredients in the center of each square. Pull up the corners and seal the edges. Sprinkle sugar over the top.
Bake at 450 degrees for 14 minutes.

Easy pizza calzones

1 (8 ounce) package refrigerated crescent rolls
mozzarella cheese
Parmesan cheese
Spaghetti sauce

Unwind the roll dough, and separate into 4 rectangles. Pinch diagonal lines to seal. Put on enough spaghetti sauce to cover 1/2 of the rectangle. Put approximately 2 Tablespoons of cheese on top. sprinkle Parmesan over the top. Fold rectangle over. Press the edges firmly with a fork to seal. Bake at 350 degrees for 10 to 12 minutes, or until golden brown.

Single Serving Pancakes

¼ Cup of Flour
1 teaspoon of sugar
½ teaspoon of baking powder
Dash of salt
1 teaspoon of egg
¼ cup of milk


Combine dry ingredients. Stir together.

Add egg and milk. Stir together until moist.

Drop batter on hot griddle. Turn after two minutes or when the top of the pancake is bubbly. Cook two more minutes.

Serve with syrup.

Strawberry Chocolate Dream Pie

Pie Crust:

½ cup of flour
¼ teaspoon of salt
¼ teaspoon of sugar
3 Tablespoons of Butter, cut into small pieces
4 teaspoons ice water or more as needed

Mix dry ingredients together. Add butter and mix. Add water until small clumps of dough appear. Divide in half. Roll out between wax paper until 6” round. Place dough in baking pan and prick. Bake at 375 degrees for 10 to 15 minutes. Let cool.


Filling:

2 Tablespoons of vanilla pudding
4 Tablespoons of Water

Mix together until smooth


Fruit topping:

4 Large strawberries
1 Teaspoon of water
1 Tablespoon of sugar

Stem berries. Place one or two large berries to one side. Wash and slice berries. Set aside.
Combine water and sugar. Set aside. Take berries that were set aside and mash into small pieces. Pour water and sugar on top. Set aside.

Chocolate:

1 Tablespoon of chocolate

Melt chocolate. Set aside.

Assembly:

Pour chocolate into bottom of pie crust and smooth. Let cool. Pour pudding on top. Arrange strawberries in circles over the top. Pour Strawberry sauce over top. Eat

Single serving Strawberry Shortcake

2 ladyfingers

3 large strawberries
1/8 tsp. sugar

2 tablespoons of whipping cream
1/8 tsp. sugar


Put two lady fingers in a bowl and set aside. Core and cut up three strawberries in a cup. Mash with fork. Add a 1/8 of a teaspoon of sugar. Stir and set aside. Pour 2 Tablespoons of whipping cream in a sealable container. Shake until the cream becomes thick. Add a 1/8 tsp of sugar to whipped cream and continue shaking for a few more minutes. Pour Strawberries over ladyfingers and top with whipped cream. Eat up.

Mini Cinnamon Rolls

1 can of crescents
butter
cinnamon
sugar

Open cresent roll can. Pull apart rolls to form rectangles. Seal the diagional cuts. Butter rectangle (like a piece of toast). sprinkle cinnamon over the top and then sprinkle the sugar. Roll up from the long end. Cut into three pieces. Bake at 375 degrees for appoximately 10 minutes. Ice after they are removed from the oven. Makes 12 mini cinnamon roll.

icing: 1/4 c. powdered sugar and enough water to make a semi-thick paste. spread over rolls.

Santa Lucia Crown

½ cup warm water
½ cup of warm milk
¼ c butter, soften

½ cup of sugar
1 teaspoon of salt
1/8 teaspoon of tumeric powder or saffron
4 ¼ to 4 ¾ cups all-purpose flour
2 ½ Tablespoon Of dry yeast

3 eggs
Powdered Sugar frosting
Red and green cherry halves, optional

Combine first four ingredients. Set aside

Combine sugar, salt, tumeric, and 1 ½ cups of flour. Add wet ingredients. Blend well.

Add 2 eggs and the remaining flour to make a soft dough.

Knead on a lightly floured surface until smooth and elastic, about 6 to 8 minutes.

Place dough in a greased bowl. Allow to rise until doubled.

Punch dough down. Divide a 1/3 of the dough off and set aside.

Take remaining dough and divide in thirds. Roll each clump of dough into 25” ropes. Braid together. Pinch ends together to seal. Place on a greased Cookie sheet. Repeat with smaller dough ball.

Allow both braids to raise until double. Brush with egg. Bake in a 375 degree oven.
Small Braid: 15 minutes.
Large Braid: 25 minutes

Let cool. Place smaller braid on top of the larger braid. Drizzle frosting on top and dot with cherry halves.

For frosting, combine:
1 cup powdered sugar,
4 to 5 teaspoons of water or milk
½ teaspoon of vanilla

Kilbowie Treacle Scones


1 Cup of flour
¼ teaspoon baking soda
¼ teaspoon cream of tartar
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon cardamom
1/8 teaspoon nutmeg
½ Tablespoon Sugar
1 Tablespoon butter, melted
1 Tablespoon treacle (molasses)
1/3 + Buttermilk


Sift together the flour, baking soda, cream of tartar, salt, cinnamon, cardamom, nutmeg, and sugar.

Combine butter and molasses. Stir into the flour mixture. Add enough buttermilk to make a soft dough.

Turn out the dough on a floured board. Knead lightly for less than a minute. Roll out until the dough is about ½ inch thick. Cut into four pie-shaped wedges.

Place wedges in a lightly oiled or buttered griddle. Bake for 5 to 6 minutes, when the scones will have risen to almost double their size. Turn over and bake for 3 or 4 minutes on the other side, until lightly browned.

Banana Foster Biscuit


Place 1 tsp. Of butter in the bottom of a cupcake holder or muffin tin.

Add three thin slices of banana, 1heaping teaspoon of brown sugar and a sprinkle of cinnamon on top of the butter.

Use one small biscuit or cut a large biscuit in half and place on top of the banana mixture.

Bake at 350 degrees for 10 minutes. Remove from the oven carefully and enjoy.
